Unit aim

Examines the concept of sustainability from  environmental , economic, social- cultural and historical perspectives. Students  are introduced to sustainability  issues facing the Tourism and Hospitality  industries and strategic solutions are explored . Topics  covered include environmental externalities, social entrepreneurship , eco-design and  sustainable development as a business priority.

Unit content

Topic 1: Defining sustainability from a historical, environmental, economic and socio-cultural perspective.

Topic 2: Corporate social responsibility, corporate governance and social entrepreneurship.

Topic 3: Externalities of hotel operations  and environmental accounting

Topic 4: Water, energy and waste management

Topic 5: Sustainability and the hospitality customer experience

Topic 6: Environmental management systems  and certification

Learning outcomes

On completion of this unit, students should be able to:
