Unit aim

Introduces students to the history, origins, trends and contemporary issues of accommodation operations, including forecasting, budgeting, and yield management. Evaluates the impact of brands, ownership structures and target markets on the accommodation organisation and the guest cycle. Discusses how the experience and sharing economies affect operations of the accommodation, and explains the metaphor of the 'theatre of accommodation' in relation to the guest cycle.

  1. Introduction to accommodation operations
  2. History of accommodation, hospitality and hospitableness
  3. Hotel classification and grading structure; brands and target markets; quality and luxury
  4. The experience economy: the 'theatre of hospitality', emotional intelligence, aesthetic labour, culture & values; complaint handling
  5. Technology and the hospitality industry - the digital age and digital business disruptors
  6. Rooms division - functional departments: the front office, sales, housekeeping and the maintenance departments
  7. Hotel operating structures: mergers, managed, franchised, strata and owned hotels. Hotel development costs
  8. Budgeting and forecasting: revenue and yield management, outsourcing
  9. Security and legal aspects 

Learning outcomes

On completion of this unit, students should be able to:
1 describe the accommodation sector, and examine the relationship between this sector and other components of the hospitality industry
2 identify and explore operational issues within the front and back of house areas of accommodation organisations
3 compare the relationship between an accommodation provider's target market and its organisation structure, facilities and service culture
4 describe the Guest Cycle and evaluate how it relates to a range of accommodation organisations.

On completion of this unit, students should be able to:
