Unit description

Examines the concept of sustainability from  environmental , economic, social- cultural and historical perspectives. Students  are introduced to sustainability  issues facing the Tourism and Hospitality  industries and strategic solutions are explored . Topics  covered include environmental externalities, social entrepreneurship , eco-design and  sustainable development as a business priority.

Unit content

Six modules comprise this unit:

1.  Defining sustainability from a historical, environmental, economic and socio-cultural perspective
2. Corporate social responsibility, corporate governance and social entrepreneurship
3.  Externalities of hotel operations and environmental accounting
4.  Water, energy and waste management
5.  Sustainability and the hospitality customer experience
6.  Environmental management systems and certification

Learning outcomes

Unit Learning Outcomes express learning achievement in terms of what a student should know, understand and be able to do on completion of a unit. On completion of this unit, students should be able to:

demonstrate knowledge of sustainability and sustainable development concepts and issues

demonstrate the ability to analyse environmental externalities

demonstrate the ability to develop strategies to make sustainability an integral component of business strategy and operations

demonstrate the ability to reflect on the challenges of integrating sustainability into business strategies.
